Special feature: Kyoto, the city of Chami. This issue introduces the coffee shop ‘Kohi Sankyo (珈琲山居)’.
Coffee Yamai, a resting place brimming with kindness – crafted by a couple who adore coffee and cafe culture
Opened in 2019 on the Shin-Omiya shopping street near Daitokuji (大徳寺), it is a coffee shop with a rich tea flavor, as it aims to be ” ‘Shichuu no Sankyo (市中の山居: mountain residence in the city)’ in the language of the tea ceremony, a place where you can relax even though it is in the middle of the city. It is run by Iyama Takayuki, a coffee lover and coffee shop enthusiast, with his wife, Yuko.
The beans are ground in small quantities and roasted to medium to deep roast using a hand-cranked roasting machine in the store. The beans are carefully selected from coffee farms in good growing conditions. The recommended ‘Bolivia’, brewed slowly and deliberately by hand drip, has a slightly sweet aroma.
Yuko’s vegan sweets, made without eggs or milk, are also available in bite-size portions and are gentle on the body, making them perfect for a quick break during your travels. The careful time spent spinning these sweets will make you feel relaxed and at ease.
