The cream inside a cream puff does not necessarily have to be soft. The custard cream at the base of this shop’s choux pastry is firm!

“The reason the cream feels firm is that a large amount of butter is kneaded into it. Firm cream is easier to eat, and since butter has a low melting point, it dissolves instantly in the mouth. Our choux pastry is thick and thoroughly baked for about an hour. We developed this custard cream specifically to match such a robust pastry,” explains the Production Manager, Hisada Kotonori.

The whipped cream placed on top is also stiffly whipped to match the custard. There is no worry of it collapsing during transport, and above all, a tall choux is remarkably ‘photogenic’.

In 1965, the brother of the third-generation owner of the Kanda Ohmiya Yogashiten (神田・近江屋洋菓子店 [Pastry Shop]) opened this independent business. The shop’s skill in creating sweets that brighten up a room and delight guests, stems from its history of catering to the night-time trade.

“We receive an overwhelming number of orders for whole cakes for celebrations from clients at Ginza’s clubs. We keep seasonal fruits and skilled hands ready to meet any request and exceed expectations,” says the shop manager, Ichimura Yasuo. Please take a look at their display window, filled with elaborate cakes that shine like jewels.

The Firmly Finished Cream Holds Its Shape, Making It Ideal for Gifting

From the front left: Chocolate Ganache Choux (生チョコシュー) (Ginza store winter limited edition) 500 yen each; Salted Caramel Choux (塩キャラメルシュー) 500 yen each; Chestnut Mont Blanc Choux (和栗モンブランシュー) (seasonal) 650 yen each. The cream puff in the photo above is the Vanilla Choux (バニラシュー) 450 yen each. The choux pastry is baked with a cookie crust on top, providing a satisfying texture.
